From the storied El Borbollon mill in Santa Ana, this washed El Salvador lot is all about balance and clarity. Grown high in the APaneca-Ilamatepec mountains, the beans benefit from rich volcanic soils and expert processing, resulting in a clean, refined sweetness with a gentle acidity. Bourbon and Pacas varieties tend to be soft, rounded profile, while the careful washed process ensures a crisp, well-structured cup. A beautifully smooth coffee, showcasing generations of expertise.
