This coffee from Timor-Leste takes the natural process one step further. After hand-picking and sorting, the cherries undergo a short 12-hour anaerobic fermentation before drying, a rare and careful approach for the region. The result is a cup that's layered and expressive, with the juicy sweetness of ripe fruit balanced by a smooth, rounded texture. Whether you're brewing it black or adding milk, expect depth, clarity and a flavour experience that lingers long after the last sip.
