Nestled on the northeastern slopes of the San Salvador Volcano, Finca Las Mercedes has seen the Aguilar family perfect the art of coffee cultivation over six generations. Here, coffee thrives at an altitude of 1700 meters, creating a perfect staging ground for their honey processed beans. The beans undergo a 22-day drying phase under both sun and shade, reflecting the meticulous care they pour into each batch. This process teases out the subtle sweetness and complex flavours within the beans, ensuring a high-quality cup that showcases the essence of El Salvadorian coffee culture.
