Lollipop by Formative is a wild ride of innovation meets expression. Grown at Finca Paraíso 92 by renowned producer Wilton Benitez in Cauca, Colombia, this Castillo varietal is anything but ordinary. The beans go through a multi-stage, high-tech fermentation process—think yeast enhancement, mucilage recovery, and cherry sterilisation—to pack a punch of clean, fruity, almost candy-like character. Expect a cup that’s vibrant, complex, and seriously fun. A showcase of Colombian terroir with a modern twist.
