Meet Silvestre Justiniano Velasquez Morales, the devoted owner of Rancho las Vegas, nestled in the vibrant community of Ixconoli, within Tectitan municipality, Huehuetenango. With an altitude of 2,000 meters, the farm‘s nuanced environment results in a distinct coffee profile. Here, meticulously washed Catimor, Bourbon, and Caturra varieties are pulped by hand, fermented in tanks for optimal flavour enhancement, then carefully dried on concrete surfaces. The balanced and flexible roast profile ensures the bright and lively notes shine through, whether in an espresso or a light, refreshing pour-over.
