Experimental, characterful coffees with unusual processing and vivid flavours from funky to boozy.
This Colombian filter roast is the result of some seriously creative processing. The cherries were co-fermented with yellow fruits, inoculated with yeast, then put through a double anaerobic wash and a "thermal shock" (a hot-to-cold rinse) to lock in the flavour. All that science translates into a cup that's bursting with tropical brightness and lush stone-fruit sweetness, with a vibrant, juicy finish that keeps you coming back for more.
